
I picked up the watermelon radish at the West Palm Beach farmers market Saturday morning from Jodi at Swank Farms:)
Originally cultivated in China, large, colorful watermelon radishes are a nutritious root vegetable. The Chinese have long believed in the healing powers of this vegetable, thanks to its high photochemical profile including zeaxanthin, lutein and beta-carotene. Watermelon radishes are a rich source of antioxidants,vitamins and minerals.
I tried roasted it first with some EVOO and fresh rosemary. It lost it's brilliant color in the process so I put it to my mandolin raw and did a sweet Asian pickling with fresh ginger and sherry vinegar, it came out awesome and beautiful on the plate!!!
